Artisanal Wild Ales

Observatoriet is a brewery that uses classic wild yeast cultures to make modern wild ales. Mostly aged in oak barrels the beers become deliciously tart, and combined with modern brewing methods refreshingly hoppy and thirst quenching.

The method

Brewer Simon Toft, Observatoriet

My name is Simon Toft Hansen; I am the man behind Observatoriet. I have a long history on the Danish brewing scene. I founded a brewpub in Copenhagen at age 28 and went on with this brewery up till now where it is a big operation with several locations and employees.

I always had an attraction to wild yeast cultures. For me brewing beer is like writing a song; you need to do the groundwork writing the melody and the lyrics, but in the end there also has to be a bit of magic to give it soul. For me that is the wild yeast cultures I use in this brewery – they can add that bit of magic and turn a piece of craftmanship into art. And so – I had to follow my dream and make this brewery.

Brew day in Observatoriet is where I begin the long process of making wild ale. I make very simple beer to be aged in mainly oak vessels, though I have other woods available as well as steel. The beer matures in the wood in a process that involves slow ingression of oxygen to feed the wild yeast. Then comes the important stage where I determine when the beer should be pulled. When the beer is ready, it has wonderful wood character and lots of wild yeast funk, but is never identical to previous batches. I assess the beer, perhaps blend several batches together and then introduce modern techniques such as dryhopping and spicing to finish the beer.

The thought process of tasting where a beer might be going flavour wise and taking it to its destination is like an extra layer to conventional brewing, and that is what makes this product so intriguing to me; the combination of craftsmanship and artistry.

Observatoriet continually makes new beers, and some are only on draught.

POLLUX
Hoppy Wild Ale

This refreshing ale is matured in an oak foudre for 9 months with wild yeast cultures. Afterwards generously dry hopped with Citra hops. The first flagship beer from Observatoriet, and a great introduction to the brewery.

Alc. 6,5% Vol
Ingredients: Barley malt, Wheat malt, Yeast, Hops.

RAKEL
Wild ale with Myrica Gale

This intense wild ale was held in an oak foudre for 9 months before it was prepared with fresh wildly sourced Myrica Gale and American hops. The goal was to achieve a distinctive and unique aroma and flavour, drawing on Nordic tradition of using local ingredients combined with a very nice complementary modern hop blend.

Alc. 7% vol
Ingredients: Barley malt, Wheat malt, Hops, yeast, water, Myrica Gale.

TABLEAU
Wild Grisette / Table Wild Ale

This thirst-quenching wild ale is brewed like a Grisette, but with Observatoriet's wild cultures it becomes something else. It has a definite Geuze swagger, but in the form of a light table beer. Brewed with extra pale pilser malt, a wheat addition, the wild cultures pop with exotic flavors. For your enjoyment, it is also dryhopped gently with Hüll Melon and Citra. A very drinkable beer with an unforgettable character.

OBERON
Dryhopped Wild Ale

This intense wild ale comes from a big foudre. The beer itself is very clean and sparkly, though still full of character. A selection of beautiful, tropical hops in the form of Lotus sets this ale apart from traditional wildly fermented beer, and a small spice addition brings a peppery note. Enjoy it on a sunny day or with light dishes of fish, poultry or asian food.
